Energy Scramble with Avocado and Crunchy Toast

- + Another pan (preferably cast iron for toast)

INSTRUCCIONES
Step 1:
The vegetables are ready! The first thing is to have everything chopped up and ready. Cut the onion, jalapeno (or yellow pepper) and mushrooms. Keep the spinach washed and ready to hand.
Step 2:
The sofrito. Heat the olive oil in the non-stick skillet over medium heat. Add the onion and the chopped chili, and sauté for one minute until the onion becomes transparent.
Step 3:
Add the rest of the vegetables. Add the mushrooms to the pan and cook for 2-3 minutes until they release their water and start to brown. Right after, add the handful of spinach and stir until reduced. This will take less than a minute.
Step 4:
To beat the eggs. While the vegetables are cooking, crush the 4 eggs in a bowl, season with salt and pepper to taste and beat them vigorously with a fork until the yolk and white are well combined.
Step 5:
Cook the scramble. Pour the beaten eggs over the vegetables in the pan. With the spatula, stir gently, bringing the edges to the center, until the eggs are cooked but still juicy. Remove from the fire.
Step 6:
Perfect toast. In the other skillet over medium heat, melt the butter. Place the bread slices and toast them on both sides until golden brown and crisp.
Step 7:
The final assembly. Place the toast on a plate. Serve a generous serving of our vegetable scramble on top. Cut the avocado into slices and crown them over the eggs. And ready!
TIPS
- + Peruvian Flavor: If you want to give it a touch more of our land, use yellow pepper instead of jalapeño. It will give it a characteristic and delicious flavor and spiciness.
- + Extra creaminess: For even creamier eggs, you can add a splash of milk or heavy cream when you beat them.
- + Add cheese: Just before removing the eggs from the heat, you can sprinkle some crumbled fresh cheese or feta cheese for an added savory touch.
- + Vary the vegetables: This recipe is a base. Feel free to add other vegetables you have on hand, such as peppers, cherry tomatoes or asparagus.
