Camu Camu Soft Drink: Vitamin C from the Jungle in your Glass!

- + Crusher (such as the one used for mashed potatoes)

INSTRUCCIONES
Step 1:
The Soak. Wash Camu Camu fruits thoroughly. Place them in a large, sturdy bowl. Heat the water until it is very hot, but not boiling, and pour it over the fruits.
Step 2:
Patience. Let the camu camu sit in the hot water for 15 minutes. This step is key to making the pulp softer and making it much easier to extract all its juice.
Step 3:
To Crush! After 15 minutes, with the grinder, begin to crush and press the fruits directly into the water. Do this vigorously for several minutes until you see that most of the fruits have burst and the pulp has come off the pepper. You will see how the water turns a deep pink color.
Step 4:
The Colado. Place a strainer over a large jug and pour out all the contents of the bowl. With a spoon, press the remains of pulp and peel well against the strainer to squeeze out every last drop of flavor.
Step 5:
The Final Touch. Sweeten the juice as you like, stirring well until the sugar dissolves completely. Finally, squeeze the juice out of a lemon; this will enhance the flavor and help preserve the color.
Step 6:
Let's Cool! Take the jar to the refrigerator and allow the soda to cool completely. It should be enjoyed well frozen!
TIPS
- + Why not use a blender? This is the most important secret. If you blend the camu camu, the seeds will crush and release tannins, making the juice bitter and with an astringent sensation in the mouth (what we call “spotty”). The mashing method is milder and extracts only the pure flavor of the pulp.
- + Antioxidant Power: Thanks to its incredible vitamin C content and other compounds such as flavonoids, camu camu is a powerful antioxidant that helps strengthen our defenses and fight free radicals, preventing premature aging.
- + Color and Maturity: The color of your soda will depend on how ripe the fruit is. The redder and more purple the camu camu is, the more intense the pink color of your drink will be.
- + Natural Sweeteners: Try sweetening this soda with honey or diluted panela for a more natural option. The combination of flavors is spectacular!
