Bembos “A lo Pobre” Burger with New Creole Sauces

20 min
This is a monumental hamburger that pays homage to a classic of Peruvian food. The base is a juicy 100% beef burger cooked on the grill, giving it an unmistakable smoky flavor. It is served on a toasted hamburger bun and built layer by layer: first, a base of Golf Tartar sauce (a mix of mayonnaise, ketchup and mustard), followed by fresh tomato and white onion. On top of the meat, the star side dish of “to the poor” is placed: fried ripe banana and a fried egg with a perfectly liquid yolk. The great news is that it is crowned with the new Creole sauces from Bembos: a hot chili limo sauce and a sweet rocoto sauce that give it the final touch of Peruvianism.

HERRAMIENTAS

  • + Grill or grill pan.
  • + Fryer or small pot for frying.
  • + Frying pan or griddle for the egg.
  • + Cutting board and knife.
  • + Spatula and tweezers.

INSTRUCCIONES

Step 1:

Prepare the Grill. Heat the grill to a very hot heat.

Step 2:

Fry the side dishes. While the grill heats up, fry the ripe banana slices in hot oil until golden brown and caramelized. Remove them and drain them.

Step 3:

Cook the Hamburger. Season the burger with salt. Place it on the hot grill and cook it for approximately 7 minutes, turning it over half the time, until cooked and with grill marks.

Step 4:

The Fried Egg. In a griddle or skillet with a little oil, fry the egg. The yolk should remain liquid.

Step 5:

Assemble the Hamburger. Lightly toast the bread tops.

Step 6:

Build “To The Poor”. Brush the base of the bread with the Golf Tartar sauce. Place the tomato slices and onion rings on top.

Step 7:

Coronate. Place the grilled burger on top of the vegetables. Add a layer of the Aji Limo sauce. Arrange the fried banana slices and, on top of them, the fried egg.

Step 8:

The Final Touch. Finish the dish with a generous drizzle of Rocoto Dulce sauce over the egg yolk. Place the top cover of the bread.

TIPS

  • + Grilled Flavor: The secret of the flavor of this hamburger is cooking it on the grill over a fire. This gives it a smoky flavor that you can't get in a flat pan.
  • + The Ripe Banana: For the perfect sweet touch, make sure the banana is ripe (with a yellow peel and black spots).
  • + Liquid Yolk: Do not overcook the egg. The fun of “to the poor” is that the yolk is liquid and spills over the hamburger when bitten, creating a natural sauce.
  • + The Sauce Balance: The combination of Tártara Golf (creamy), Ají Limo (spicy and sour) and Rocoto Dulce (bittersweet) is what makes this version special. Don't be afraid to combine them!
