This lesson is the ultimate expression of Optimal Kitchen, showing how a single ingredient, purple corn, can be the star of a dish in multiple ways without generating waste. The plate is some “Broaster” wings (crispy fried wings) with a completely Peruvian twist.
The preparation consists of boneless and pre-cooked chicken wings that, instead of being breaded with bread, are covered with a crispy crust made with the remains of the purple corn that was used to prepare the sauce. This process is cleverly called “Enmaize”. The wings are fried until super crisp and served over creamy white corn puree.
Finally, they are bathed with an intense and brilliant BBQ sauce made with the essence of the same purple corn, and are decorated with other “plus products” of corn, such as dehydrated corn hairs, which provide a roasted field aroma. It's a dish that plays with textures (creamy, tender and extra crunchy) and deep, sweet and sour flavors.
